1 lb (450g) ground beef or turkey
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (14.5 oz) diced tomatoes with green chilies, drained
6 large flour tortillas
2 cups shredded cheddar or Mexican blend cheese
1 cup salsa
1/2 cup sour cream (optional)
1/4 cup chopped cilantro (optional)

1. Preheat the Oven
Preheat your oven to 375¡ãF (190¡ãC).
2. Cook the Meat
In a large skillet over medium heat, cook the ground beef or turkey until brown, breaking it up with a spoon as it cooks. Drain any excess fat.
3. Add Onion and Garlic
Add the diced onion and minced garlic to the skillet, and saute for about 2 to 3 minutes until softened.
