I have really good luck using a sharp box cutter to first rotate the coax under the knife, pressing hard enough to cut the insulation but not hard enough to cat the braid. Then I cut a lengthwise cut in the same way. The insulation rolls off comfortably leaving the braid undamaged. I have stripped several feet from a piece of coax using this method.
Of course, use a knife that is sharp enough to require care during use.
