I should also say that the display lights up, saying "VFO A? 7.150 MHz, it will not tune, although the encoder shows 5-0-5-0-5-0 at the pins as it is turned. Pressing the knob 'in' does nothing.?

You are correct. However, they've already been freed up. The stock Raduino has 4 data bits to the LCD.

I was under the impression that the existing 2x16 LCDs could be used in 4 bit mode or 8 bit mode which would free up 4 pins. Many alternatives ....OLED displays with IIC interfaces, etc etc.....but
