This by a Known manufacturer, may be better than ones on eBay?

Probably work fine, I have not tried one.
I believe some have reported success with a 100k pot,
though I would probably choose a 10k version, same as the pot from hfsigs.
Plenty of 10k up on ebay too.

Check the pot out with an ohmmeter before wiring it up, make sure you know which terminal is the wiper.
The wiper on these 10 turn pots is not where you might expect it.
If you wire it up wrong, you will burn the pot out.
