No, that's not neccessary!

Or does the lates sketch just allow more function features that I can jump over and not use?
Yes, that's exactly the idea. The sketch should always work even on a brand new BitX40 board without modifications.
Some of the extra functionalities the sketch provides will only become functional after some (minimal) modifications are installed.
But if you don't need them then you just don't install them, and everything else will still work normally.

Also, is the 10 turn tuning pot wired just the way the 1 turn pot was wired?
Yes, electrically it is wired exactly the same way (just replace the 1T pot by a 10T put). Note however that many 10T pots have a different pin layout than 1T pots. On a 1T pot the wiper is usually on the center lead. Most 10T pots have the slider on the rear. See for example:
