Why not add the TZ=? command to the start.sh script and set yout timezone to TZ=Etc/GMT and see what happens.
While you're in there you can change the cd sbitx line to cd ~/sbitx because without the tilde you can only run the start.sh from pi's home directory.

But - I made some tests:

I stopped the start.sh terminal => sbitx stopped automaticaly too.
The I opened a new terminal session typed sbitx/start.sh => sbitx starts => now I get decodes but the time info in Title of app is incorrect and therefor the time for logging qso's.
The time problem and decoding problem may be independent.

I rebooted the zbitx => no decodes
I removed power from zbitx => decodes Ok

I think there is a timing problem at startup too, depending of the status of the pico/display
I have to check the Software of the pico, what happens when rpi zero is off. What is the state of pico. What is he doing when loosing and regaining the connection to zbitx again?
thinking the pico should get reset when connection to rpi zero times out.
