This problem is due to the ft8 library used in the sBitx software. This was already brought up by Shawn, K7IHZ, in this thread:

You can migrate to the 64bit version from JJ and team, and to use WSJTX/JTDX application for FT8 and use the screen scaler tool in the toolbox to resize the screen to fit the 7inch display.
