The tinySA and tinySA Ultra are hardware limited to outputting one frequency only.? You can buy a second one and then use a combiner to get the result you want.? A two port, quality CATV splitter

Not sure if I have missed it, but in the signal generator is there an option for a two tone output suitable for testing SSB transmissions?

A notch filter can also be used to reduce the level of the fundamental, and improve the overall dynamic range.
This is common practice when making IMD measurements.

The tinySA can reliably see harmonics at least down to -75dBc. This because you can input with the fundamental below -30dBm and use the multi band harmonics measurement method with a very low band

Quite the opposite in my experience with the Tiny SA ultra.
Harmonics that are known to be c -55dBc or a little more more down are there, but are not displayed at all in Harmonics mode? above?
