I don’t think the V600 can be connected via network.

I have looked through the Epson software but don’t see an option to connect to a scanner that is connected to the Mac via us.

My Epson Scan 2 sees the USB-connected V600 without a problem. Try running the Epson Scan 2 Utility to see if there’s a ghost scanner in the list.
