I’m no sailmaker and others will have different opinions obviously . I guess budget is the key factor. Dacron is a proven material, commonly available and easy to repaire with needle and thread. Other materials are lighter and/or stretch less, some are molded into perfect shape, etc, but have trades offs such as UV, chaffing and flogging resistance.?If budget is not unlimited, I’d start with Dacron and mods in this order:
1- radial cut headsail. It will hold its shape longer
2- crosscut square top main. More sail area in light winds
3- radial square top main
4- other materials
