Month’s Recipe- Chewy Ginger Cookies

Ingredients
- ? cup softened butter
- 1 cup sugar
- 1 egg
- ? cup of molasses (I actually used treacle and it
worked fine)
- 2-1/4 cups of all-purpose flour (For those of you in
Australia, I used self-raising, flour and didn’t bother with
the baking soda)
- 1 teaspoon baking soda?
- ? teaspoon ground cinnamon
- ? teaspoon ground cloves
- 2 teaspoons ground ginger
- ? teaspoon salt
?
Instructions?
- Cream the butter and sugar in a large bowl, then
beat in the egg and molasses
- Combine the flour, ginger, baking soda, cinnamon,
cloves, and salt then add to the creamed mix.
- Mix well, but don’t splash it all over the toaster
like I did.
- Roll into 30 small balls and place socially
distanced on a baking sheet.
- Bake in the oven at 180C/350C/Gas Mark 4. Until
puffy and lightly browned.
- I baked these for 15 minutes.
- Allow to cool on wire racks
