They make the chuck MUCH more versatile. Among other things, you can make your own chuck jaws cut for a specific part, which made it more concentric. This is of particular use in production shops, so a home shop person might not need it... But. ;)?
In my class, the folks who went on to the CNC portion, their first project was to make a set of soft jaws for their 2nd project...
Even in a home shop or one doing strictly one-off stuff, if you were making pistons for an engine with more than one cylinder, such a set of jaws would be useful.?
Also, if you damage a jaw, they're replaceable. I've never had a head crash, myself. Yet. ;)

these guys are 9 bucks apart for a plain back chuck . You will
need a backplate unless ya have one . Ya can order one with the
backplate or without from CME , ya will still have to do some
machining for proper fit , which is something ya would have to do
from any vendor .
I have both types of chucks. ?I find the ones with separate jaws much faster to change. The ones with the reversible jaws require the removal of 6 screws, then the jaws have to be carefully tapped off with a soft face hammer.
