While I far prefer the original series in virtually every way, I think Kelvin McCoy got perhaps the greatest McCoy (or even ST Doctor as a whole):

Several of my favorites involve Academy instructors in ethics stepping on the landmine of arguing the ethics of what Karidian did with Kirk in their class.
