PEI Recipe

 

Lobster-Stuffed Spuds

From Chef Austin Clement

  • 1/2 cup lobster meat, drained and diced
  • 6 PEI baked potatoes, hot
  • 2 tbsp ADL butter
  • 1/2 cup ADL sour cream
  • 1/4 cup green onion, diced small
  • 1/4 tsp fresh cracked pepper
  • 1/4 cup cooked bacon
  • 1 cup Cheese Lady's gouda, grated

Preheat oven to 400F (200C).

Cut baked potatoes in half lengthwise and scoop out the flesh; set the skins aside. In a bowl, mash the potato with the butter, sour cream, green onion, and half of the cheese. Beat until smooth. Fold in lobster meat and bacon, and season with salt and pepper. Spoon mixture back into the potato skins. Cover with remaining cheese and bake for about 15 minutes.

Yield: 6 servings of 2 stuffed halves each.

DX Lodge Renovations

As far as renovations, the old walls/ceilings have been removed, the floors have been leveled, the bathroom plumbing is roughed out and the new windows are installed. I'm hoping for a finish before WPX CW the end of May when I return. Of course, it always takes longer than it takes, but I am highly confident it will be fully completed before August.?

More Portable Operations

 

Something else to ponder on.
POTA (Parks On The Air) lists 192 accredited parks on PEI, only 42 of which have been activated! Lots of pickings gentlemen and the Chasers will want us! One is just down the road from the Lodge.

I am in the process of putting the overlays onto Gigglemaps and/or printing the list to highlight on regular PEI road maps.

More fun to be had (as long as the snow holds off)!
