My group has a foodbank collection last saturday in each month. Is
there any way of setting that up in Calendar?

Alas, no.

If you go to a last Saturday of a month that has five and create the event there you can select:

Repeats: Monthly
Repeats Every: 1 months
Repeat by day of the week

Then the Repeat summary says "Monthly on the Fifth Saturday", and it means exactly that.

You could also set up a repeating event for the Fourth Saturday, but in months that have a fifth you'd have to manually delete the instance on the fourth.
