The Rule of 7

After several feeble attempts to recall the Rule of 7, I will now
try to explain to the best of my recollection the dark secrets of
grilling in a simplistic manner.

I tried several days ago to write the Rule of 7 parameters, but
somehow before I could send the message I inexplicably hit the Escape key and the whole message was lost.

Anyways, here is the Rule of 7 which originated in an article I saw
in the Pedernales Electric Coop monthly magazine several years ago.

This method works with practically with any meat, fish or veggie
cooked on a Weber grill. I, being the purist afficianado of charcoal
briquettes for grilling, will explain it for grilling on a charcoal
grill although I suppose it would also work on a gas grill.

I will use steak as an example:

Pour a small amount of EVOO on the steak and crush in kosher salt (or
coarse grind sea salt) and extra coarse black pepper on both sides of
the steak. NY strip steak works well with the Rule of 7.

After the grill is hot enough to fry your hand, put the steak on the
grill and cook for 4 minutes. Then turn the steak 1/4 turn and cook
for 3 more minutes (hence the rule of 7). Then flip the steak and
cook 4 minutes on the second side and then turn the steak 1/4 turn
and cook for 3 more minutes.

The steak (which was approximately 1 17/32 thick should turn out
to be medium which is my preferred level of doneness.

Then take the steak off the grill and put on a platter and put
about 1 1/16 ounce of butter on top and cover with a disposable
cake pan bottom side up of the cake pan. Let the steak rest for
about 2.2546 minutes to allow the butter to melt into the steak.

Perfecto mundo. And I don't even like butter, but it does add
to the flavor of the steak.

This method also works on chicken breasts and pork chops, and
burgers.

Just use the Rule of 7 in multiple sequences.

Here is an example for a bone-in skinless chicken breast:

I use a canary colored legal pad to keep track of the Rule of &.

Flip 6:07 pm
Turn 6:11 pm
Flip 6:14 pm
Turn 6:18 pm
Flip 6:21 pm
Turn 6:25 pm
Flip 6:28 pm
Turn 6:32 pm
Flip 6:35 pm
Turn 6:39 pm
End 6:42 pm

Take el perfecto chicken off the grill at end of cooking cycle and
cover with aluminum foil and let rest for a few minutes before serving.

The Rule of 7 is simplistic but is idiot proof.
