1. Prepare the Pie Crust
Preheat your oven to 400¡ãF (200¡ãC). Roll out half the pie crust, and fit it in a 9-inch pie pan, allowing the excess to hang over the edge.
2. Make filling
In a large mixing bowl, combine the cherries, mixed berries, sugar, cornstarch, lemon juice and vanilla extract. Gently toss until the fruit is evenly coated.
3. Assemble the Pie
Pour the filling in the prepared crust, and dot with butter. Roll out the second half of the pie crust, and place it over the filling, or cut it in strips for a lattice top. Trim and crimp the edges to seal, then brush with egg wash, and sprinkle with sugar.
4. Bake
Place the pie on a baking sheet to catch any drips. Bake for 20 minutes, then reduce the oven temperature to 350¡ãF (175¡ãC), and continue baking for another 30 to 35 minutes or until the crust is golden, and the filling is bubbly.
5. Cool, and Serve
Allow the pie to cool for at least two hours to set the filling. Slice, and serve with vanilla ice cream, if desired.
