the 1N4148 mixer of the bitx has actually a better IIP3 than the ADE-1. I would guess that this is on account of larger FT37-43 ferrites and 1N4148 being a larger signal diode than the schottky diodes

Yes, you can do that. In the analog VFO, the voltage on the varicap determines the frequency. So reversing the voltage polarity of the tuning pot will "reverse" the frequency coverage; it will not
